Do you have to store homemade salad dressing in the refrigerator?

Is it necessary to store homemade salad dressing in the refrigerator? It only has olive oil, vinegar, and herbs/seasonings. I have made it before and tried storing it in the fridge but it got thick and clumpy since olive oil solidifies as it gets colder. Since none of the ingredients need refrigeration, does the dressing?

For a day or 2 I wouldn’t worry about it. I wouldn’t mix up more than that at a given time though.

If you take the “clumpy” mixed up stuff out about 15 minutes before you want to use it, it unclumps. inverse_mushroom_cloud
