How to store sliced vegetables to lock in nutrients and prolong life?

Hey, I have been trying to eat healthy but don’t have a lot of time on my hands. I make subway type sandwiches with turkey and veggies. I was wondering if it’s okay to slice vegetables before hand and store them in airtight containers in my refrigerator. Would this cause the veggies to lose their nutrients? How can I ensure that they last 3 or more days without losing their nutrients after being sliced? Will appreciate your help. Thanks

    it is always ok to cut the veg and store them cold in the refridgerator. this not only saves time but also comes handy when you are real hungry and tired to cook any dish imd. always wash your veg clean and pat dry then if you cut it and store it can last fresh and healthy with all the nutrients. also if you are worried then you can leave them in the freezer compartment and just bring them to room temperature 15 mins before cooking. no need to thaw them, as in this way you will be washing all the packed nutrients. sweety pie

    Use them in a week and the nutrients will still be there. Ziplocs or Tupperware or similar are best! Tiger

    When I was in high school, I used to babysit for a chef and his wife. Their fridge was full of all kinds of stuff. He had pain pasta cooked and placed in containers for easy use. He also kept cut veggies in tupperware containers filled with water. So the veggies were still colorful and crisp (like carrots, snap peas, and celery). I think cucumbers are best if you cut off what you need as you go. LilyRose
