How do flash camcorders store video clips?

I’ve used a Hard Disk Drive (HDD) camcorder, and every time you start and stop recording, the HDD camera stores that clip as one single file. So if you start, stop, start, stop, start, stop, you end up with 3 individual files. Do flash camcorders store clips in the same way? Or do they store clips to one big file? And if they DO store clips to individual files, what is the fastest way to compress them all into 1 large file?
