How to store sliced vegetables to lock in nutrients and prolong life?

Hey, I have been trying to eat healthy but don’t have a lot of time on my hands. I make subway type sandwiches with turkey and veggies. I was wondering if it’s okay to slice vegetables before hand and store them in airtight containers in my refrigerator. Would this cause the veggies to lose their nutrients? How can I ensure that they last 3 or more days without losing their nutrients after being sliced? Will appreciate your help. Thanks
