What is the proper way to store bottled trappist ales? Can I buy it cold and then store?

I tried an aged Westmalle Triple recently and could not believe the amazing taste, so I am starting my own collection for aging. Are ales like champagne, where you can’t buy them cold and then store? What is the best environment, tempreture, bottle postion for storing?

    When aging any alcohol, temperature consistency is always better than fluctuating temperatures. However, if it’s already cold, and you need to bring it up to cellar temperature just that once, I wouldn’t worry about it (or champagne, for that matter). As long as it’s not going from cold to warm over and over again.

    The ideal temperature for storate is about 12 degrees Celcius (approx 55 Farenheit), and in a DARK place – the lack of light is much more important than the exact temperature. Because they’re in a crown cap, you can store them facing any direction, but upright usually works best for ease of storage.

    Aging good beer is a joy, and the results are fantastic! You should try other Belgians (and some of the better UK, Canadian, or USian) beers as well. Guy Norman Cognito
